Ingredients

  • 1 cup full-fat cottage cheese
  • 1/2 lb ground beef or turkey
  • 1 medium sweet potato, diced and roasted
  • 1/2 cup cherry tomatoes, halved
  • 1/2 avocado, sliced
  • 1/4 cup shredded cheddar cheese
  • 1 cup chopped lettuce or greens
  • Sliced jalapeños (optional)
  • Fresh cilantro for garnish
  • Lime wedges
  • Hot honey, for drizzling (optional)

Instructions

  1. Preheat oven to 400°F. Toss diced sweet potatoes with a little oil and roast for 20–25 minutes until crisp on edges and tender inside.
  2. While sweet potatoes roast, cook the ground meat in a skillet over medium heat. Add taco seasoning (chili powder, cumin, garlic powder, smoked paprika, salt). Cook until browned.
  3.  Assemble the bowl: Start with a bed of lettuce, then add cottage cheese as the creamy base.
  4. Top with roasted sweet potatoes, taco meat, cherry tomatoes, avocado slices, and shredded cheddar.
  5. Add jalapeños and cilantro, then squeeze lime juice over everything.
  6. Finish with a drizzle of hot honey for sweet heat.
  7. Serve immediately or store components separately for meal prep.
