- 1/2 cup vanilla or chocolate protein powder
- 2 tbsp ground flaxseed
- 1/8 tsp salt (add 1/4 tsp if using unsalted peanut butter)
- 1/3 cup maple syrup
- 2 tbsp milk or water
- 1 tsp vanilla extract
- 1 1/2 cup quick oats
- 1/3 cup mini M&Ms
- 2 tbsp mini chocolate chips
Instructions
- Line a baking sheet with parchment paper.
- In a large bowl, mix peanut butter, protein powder, ground flaxseed, salt, maple syrup, milk, and vanilla extract until smooth and uniform.
- Add the quick oats, mini M&Ms, and mini chocolate chips; fold until evenly combined.
- Scoop roughly 2 tablespoons of the mixture onto the parchment-lined baking sheet.
- Roll each portion lightly with clean hands to form balls. Adjust texture with extra oats or milk if needed.
- Chill in the refrigerator for 1–2 hours for firmer texture, or enjoy immediately for softer balls.
- Store in an airtight container in the fridge for up to a week, or freeze for longer storage.
