Description

These Cottage Cheese Egg Bites are fluffy, protein-packed, and perfect for quick breakfasts or meal prep. Made with cottage cheese, eggs, and your favorite mix-ins, they deliver a creamy texture and savory flavor that rivals coffee shop versions, but with way more protein and less fat.

Equipment Needed

Ingredients

Scale

Base Mixture:

  • 8 large eggs
  • 1 cup low-fat cottage cheese
  • ½ cup shredded cheddar cheese (or mozzarella)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Optional Mix-Ins (choose your favorites):

  • ½ cup chopped spinach
  • ¼ cup diced bell peppers
  • ¼ cup cooked turkey bacon or chicken sausage
  • 2 tablespoons chopped green onions
  • Dash of hot sauce or paprika for flavor

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin with nonstick spray or use silicone liners.
  2. Add eggs, cottage cheese, cheddar cheese, salt, and pepper to a blender. Blend until completely smooth and creamy.
  3. Stir in any optional mix-ins like spinach, bell peppers, or cooked turkey bacon.
  4. Pour the mixture evenly into the prepared muffin tin, filling each cup about ¾ full.
  5. Bake for 20–25 minutes, or until the tops are set and lightly golden.
  6. Let the egg bites cool in the pan for 5 minutes before removing.
  7. Serve warm, or store for meal prep during the week.

Notes

  • Storage: Store cooled egg bites in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave for 30 seconds before serving.
  • Freeze: Place in a freezer-safe bag and freeze for up to 2 months. Reheat directly from frozen or thaw overnight in the fridge.
  • Tip: For extra creaminess, blend an additional tablespoon of cottage cheese into the mix or sprinkle cheese on top before baking.
