- 1 cup cottage cheese (low-fat or full-fat)
- 2 large eggs
- 1/4 cup maple syrup or honey
- 1 tsp vanilla extract
- 1 ½ cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- Pinch of salt
- Optional: 1/4 cup chopped walnuts or dark chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a blender or mixing bowl, combine bananas, cottage cheese, eggs, syrup, and vanilla.
- In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
- Combine the wet and dry ingredients until just mixed. Don’t overmix.
- Fold in any add-ins like nuts or chocolate chips.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 50–55 minutes, or until a toothpick comes out mostly clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack.
- Slice and enjoy!

- You can make this gluten-free by swapping in oat flour.
- Store slices in an airtight container in the fridge for up to 5 days.
