Ingredients

  • 3 ripe bananas
  • 1 cup cottage cheese (low-fat or full-fat)
  • 2 large eggs
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 ½ cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • Pinch of salt
  • Optional: 1/4 cup chopped walnuts or dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a blender or mixing bowl, combine bananas, cottage cheese, eggs, syrup, and vanilla.
  3. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
  4. Combine the wet and dry ingredients until just mixed. Don’t overmix.
  5. Fold in any add-ins like nuts or chocolate chips.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 50–55 minutes, or until a toothpick comes out mostly clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack.
